Pre-Weekend Wrap-Up

I’m a little tired.

I had to drive up to NorVA on Tuesday for a training class. I was on the road at 4 am in order to make the 8 am class. The company would only pay for one night so I opted to stay over on Tuesday night after the class was over. The ride home was much more pleasant after a good night’s sleep at the Ritz-Carlton. Nice place. I did not do any shopping even though I was surrounded by the best shops at the Galleria. I just wasn’t in the mood. However, when I looked in my closet this morning and saw nothing but browns, blacks and greys … I kinda wished I had been in the mood. I need some color!

I’m collecting vegetarian recipes for March so if anyone has any good ones let me know.

My baby boy is in Chicago until Sunday. I really miss him. It’s going to be pretty quiet around the kingdom without him. The princess has a hair appointment tomorrow and I have an appointment for a facial. We’re a little on the girlie side.

The sun is shining and I couldn’t be happier. Still cold but the sun makes me happy. I may stop on the way home and pick up a bottle of sauvignon blanc and pretend it’s summer time.

Ooh the prince is here in the Chi? I know he's cold, cause baby... It is kick butt cold out there!!!

One dish that I do often is simple but filling. I cut up some veggies, zucchini, red, yellow peppers, onions, yellow squash and mushrooms. Sprinkle with a little olive oil and season as you like. I use Mrs. Dash, a little cajun seasoning and lemon pepper. Put it in the oven on 400 degrees for about 20-30 minutes and it is simply delish!
